Now, a gluten free lemon meringue pie would normally feature gluten free pastry… but not mine! I decided to lose the pastry and instead go for an epic biscuit base. Did I just blow your mind?
In a whizz crush packet of wine biscuits then pour crumbs into a bowl add melted butter and mix well make sure its not too dry, so if you need to add more melted butter do so. Press biscuit crumbs into dish going up around the sides as well making sure its firm and even. Place into a freezer for a while.
We made this for our friend Dave on his birthday. Melt the butter in a pan, then take off the heat and stir in the crushed biscuits. Press into the flan dish and leave to set in the fridge. You can do this bit a day or two in advance.
